Raw Cashew Nuts( Known as RCN, Cashew nut Shell-on, Cashew nut in a shell, or Cashew nuts) is the name of the cashew apple sub-nut. Although a cashew apple contains 90% of the fruit, only 10% is a Raw Cashew nut. A single Raw Cashew Nut has 30% cashew kernels and 70% cashew shell. Normally 1 ton of raw cashew nut can process 250-300 kg of the cashew kernels and 700-750 kg of the cashew shells. Cashew shells are the outer coverings of cashew nuts, which are a popular snack and ingredient in various cuisines across the world. These shells are discarded by most people after consuming the nut inside, but they have several interesting properties that make them worthy of attention.

For instance, cashew shells contain a toxic substance called anacardic acid, which can be used to produce drugs and insecticides. Additionally, the shells are rich in phenolic compounds, which have antioxidant and antimicrobial properties.

The cashew tree (Anacardium occidentale) is a tropical evergreen tree native to South America in the genus Anacardium that produces the cashew seed and the cashew apple accessory fruit.[1][2] The tree can grow as tall as 14 metres (46 feet), but the dwarf cultivars, growing up to 6 m (20 ft), prove more profitable, with earlier maturity and greater yields. The cashew seed is commonly considered a snack nut (cashew nut) eaten on its own, used in recipes, or processed into cashew cheese or cashew butter.[3] Like the tree, the nut is often simply called a cashew. Cashew allergies are triggered by the proteins found in tree nuts, and cooking often does not remove or change these proteins.[4]
